Cooking Instructions:
Amritsari Chole:
1) Soak 2 cups of white chana with 1 teaspoon of dried gooseberries for 6-8 hours. (used plenty of water soaking)
2) Cook chana with spice bag (Potli), for potli ingredients required two tablespoons of tea leaves, one teaspoon of carom seeds, three green and four black cardamoms, three cloves, one inch of cinnamon stick, three bay leaves, smash up to seven cloves of garlic. Tight all ingredients like a potli.
3) Pressure cook on a high flame for 1st whistle and on a medium flame for 4-5 whistles.
4) Once cooked remove the potli and kept chana and water aside.
5) Add marinate cooked white chana with Aachi chana masala powder and keep aside.
6) Take an iron Wok & add 4 tbsp of oil. Add 1 tsp of carom seeds to it. Once the carom seeds crackle then add 4 medium-sized chopped onions.
7) Once onions turn light golden brown, add 3 tbsp of aachi ginger garlic paste to it. And add 1-2 chopped green chilies,¼ tsp turmeric powder, 2 tsp spicy red chili powder,1 tbsp coriander powder,1 tsp cumin powder, add 1 tbsp aachi chana masala.
8) Keep stirring for 5 minutes, add 4-5 tomatoes puree and salt to taste.
9) Once the oil is separated add marinated white chana and water.
10) Mash 2 teaspoons of white chana using a spatula and stir well. After 2-3 minutes add 1 pinch of kasuri methi,2-3 slit green chilies, and 1 inch of ginger juliennes.
11) Don’t stir after adding these ingredients. Temper a chole masala with 2 tbsb of melted ghee. add freshly chopped coriander leaves to it.
Bhature:
1) In a big bowl take 1 cup refined flour, 1/4 cup semolina, 1 tbsp powdered sugar,1/2 tsp baking powder,1/2 tsp baking soda, a pinch of salt, and add 1/3rd cup curd. Mix all the ingredients well together.
2) After mixing it, add 3/4 cup water gradually and knead well. Apply some on the dough.
3) Cover with a damp cloth for 2 hours.
4) Take a tray & apply oil to it.
5) Divided the dough into equal balls and cover with a moist cloth.
6) Keep oil the big wok.
7) Roll the dough balls a little thicker than chapati or roti and fry in hot oil.
8) Finally, you can plate and serve “Amritsari Chole Bhature”.
